Broccoli Quinoa Crust Pizza

Ingredients:
1 cup broccoli, cut into small pieces
½ cup quinoa, cooked
1 egg
2 sliced tomatoes
Handful of rocket salad
2 tbsp italian spicy tomato paste
2 sprigs of thyme
Salt and pepper to taste
Basil to taste

Directions

1. Mash the broccoli in a food processor. Add the quinoa, egg, thyme, salt and black pepper, and mix well.

2. Preheat oven to 200°C. Line a tray with baking paper. Spoon the quinoa mixture evenly onto it to form a pizza base and bake for 12 minutes.

3. Remove pizza from the oven. Spread the spicy tomato sauce over the pizza and top with tomatoes. Bake again for 6-10 minutes until the crust turns golden brown. Garnish with the basil and rocket salad before serving.
